Question: if Padme died during childbirth, who does Leia remember as her mother in her conversation with Luke when he tells her that they are twins in ROTJ?

The Force enabled her to see Padme's eyes tho just a newborn and thru the Force, she remembered them.

Aaaaaand Leia's shoulder getting healed after damned near being severed by blaster fire..? Lemme guess.

The Ewoks had some special herbs that, combined with her latent Force talent, effectively gave her a "fast healing" ability.

Yay me. Now give me a moment to explain how Luke was powerful enough to levitate Threepio in the chair but not enough to loosen the primitive knots that held him, Han, Chewie and Artoo captive. Or, why none of the fleeing Imperial officers or Stormtroopers reacted to seeing The Most Hunted Man In The Galaxy, Luke Skywalker, dragging a mortally injured Dark Lord of the Sith as they were abandoning ship.

Oh wait! That one's easy. Luke used The Force to influence the Imperials that this wasn't the fugitive and Sith Lord they were looking for.

Leia remembering her mother is a pure and simple case of not giving a crap by Lucas in making the overall cloth of the story fit. Artoo getting fixed and Leia's shoulder I actually don't give a crap about. There's plenty of precedent for Artoo being fried and repaired and, as Leia tells us, 'It's not bad'. A pythonesque flash wound.

I took the memory Leia had was of Bail Organa's wife, her adopted mother.

Of course, before ROTS, I assumed Padme would go to Alderaan with Bail and Leia and die shortly after.

Leia: Just a little bit. She died when I was very young.

Luke: What do you remember?

Leia: Just images really, feelings.

Luke: Tell me.

Leia: She was, very beautiful, kind, but sad. Why are you asking me this?

Luke: I have no memory of my mother. I never knew her.

The dialogue indicates Leia does not really remember her mother. Her memories could be from descriptions of her from Bail (step-dad), or attributed to the Force.

That is special pleading. Clearly the dialogue indicates Leia has some memories of her mother. If she was saying her only memories came from what someone else told her, then that's what the dialogue would say, not something contrary to that.

She doesn't say 'No, I don't remember." She says 'Just a little bit.'

The same exchange of dialogue goes on to have Luke suggesting she will have powers like him one day, which comes as a surprise to her. To suggest she actually has been using the Force to remember her mother, then, would be very odd indeed -- especially when Luke, who can use the Force, says he has no memories of his mother.

You have a power I could never have! Except, oh wait, there is that one thing that we've just been talking about where I used the Force...

Padme's death is in the prequels, which establish that the force can be used unknowingly. (Podracing!)

And she did not say "Just a little bit".

Yes, it's a bit of a retcon. But not a big one. It's easy to work around. Unless you just don't want to.

A Queen showing up with a baby one day without having been
pregnant would be an obvious adoption to the populace and would be
difficult to conceal from Leia, I would think. Of course, the Prequel
casting made it sort of obvious that Leia was adopted.

Why would Luke ask her about her real mother? The whole conversation makes no sense if Luke is asking about one thing and she is talking at odds to his understanding of the situation.

The scene as written and as played out is that both have an understanding that Leia's biological mother died long enough ago for Leia to possibly not remember her. And hence Luke's question.

I do think it gets retconned in Sith. But plenty of people have false memories of their childhood, also. Among other things, this is an easy out. Would Bail have covered up when Leia's birth mother died just as extra care that Vader wouldn't be suspicious?

As above, Luke's question is asked in such a way as to inform the viewer that Leia being adopted is common knowledge. It just never came up in previous episodes any more than Han's parentage...because it was never important.

Now if Leia had said "Sure, I remember when I was 6 and she took me to the park, but then she got hit by a drunk speeder driver and despite all the medical droids they couldn't save her..."

Of course, the original plan (at the time of JEDI) was that Luke and Leia's mother was pregnant when Anakin left and became Vader, gave birth, then went into hiding with Leia on Alderaan before dying while Leia was still a young child. This is why Leia had vague memories of her and ner sadness. When Lucas finally got around to making the prequels, he rewrote the backstory so that Padme died in childbirth, instead.
