Out of interest, did GG ever appear in any non-Spider-Man stories before his original death?

I'll assume that the time frame is somewhat generic, as you did not specify if it had to be a villain from that era or a current one, or whomever.

One villain... as the obvious has already been presented, I'll pick the Kingpin. Not only is he physically of capable of taking on two or three of the Champions directly (Kingpin vs. Iceman... that's one that would interest me!), but he's got the infrastructure to attack the Champions from every direction. I can imagine the ultimate issue... "The Champions... REBORN!"

Matthew Wilkie: I do not recall the Green Goblin appearing anywhere except for Spider-Man. The sole exception MIGHT be Fantastic Four Annual #3, in which so many villains appeared. Don't have my copy at hand, but I don't think he appeared there... but I believe that would be the sole exception.

Great choices, everyone!

One of the things I liked least about the comic was the lack of big-name villains. It was bad enough that the team was perceived as third-string (which, obviously, is worse than second-string - and that's bad enough), but to not even be allowed major villains.

Any of the ones suggested in this topic would have been great opponents for the Champions!

Although there are some other great choices mentioned so far too. I won't list them since that'll be a sneaky way of picking more than one....;-)

Stilt-Man, The Stranger, Modok, Doctor Doom, Magneto, Blob, The Sentinels and the Vanisher. You are clearly a tough man to please, Robbie! 

Compare this to Alpha Flight during JB's tenure and the only major villains they faced in their own title and others was, I think, Super Skrull, the Collector and Loki.
