Apu is probably the most consistently positively portrayed character on the show.

I was thinking that! He’s smart, conscientious, a good husband and father. But condemned (after 112 years) because his voice is some White guy doing an accent?

Speedy Gonzalez was a very different case. The character derived its humor from playing up negative stereotypes, which, as noted, Apu does not.
