If I had to pick just one writer, it would be Roger Stern. If we're doing five:

Roger Stern
Stan Lee
Mark Gruenwald
J.M. DeMatteis
Jack Kirby

Jack has to go on my personal list because I first really got into Cap (and the Falcon) during his mid-seventies run.

The Stern/Byrne run is my favorite, but i put the other two in no particular order.

I also loved the Stan Lee /Jack Kirby remake of WW2 stories.

and i reestimated the Kirby solo run of the 70s, that when i first read it  as a teen i found very inferior to the Englehart/Sal Buscema stuff, and outadated (but i loved Kirby on Machine Man). Only the first two storyarc were published in France, so we didn't got Arnim Zola, that could have changed my mind, but even those two first arcs, today, i enjoy a lot.

Edited, because "The Stern/Byrne rune" as i first wrote, would be something else entirely!
