Sal Buscema - his long run on the character is definitive to me. His Hulk is my Hulk.
Herb Trimpe - My fist Hulk comic was drawn by him (inked by Marie Severin, iirc).
Jack Kirby - I was acquainted with the character for a few years before I read any Lee/Kirby stories. His Hulk gave me bad dreams (as did Kirby's "Cro-Magnon" Jimmy Olsen)!
Steve Ditko - I loved the very-limited animation MARVEL SUPER- HEROES shows and first encountered the Ditko Hulk there. Loved it!
John Byrne - JB edges out Dale Keown despite his much shorter run if only because IT. WASN'T. ENOUGH. I was so looking forward to seeing where John was going to take the Hulk.

It's amazing the impact Kirby has on any title he creates, even if he doesn't stick around all that long. He was only on Hulk for five issues, and wasn't in for the long-haul on Avengers or X-Men, but he's still the definitive artist on each of those titles.
Herb Trimpe's a close second for me, and I'll throw in Sal Buscema for sheer longevity. I'll add Todd McFarlane and Dale Keown to round out the list, since they defined the character for the 1980s and 1990s.
There are a lot of short-run and one-off artists whose Hulk comics I really enjoy, including Sam Kieth, Richard Corben, Bruce Timm and Steve Rude, but none of them did enough work with the character to really hit that "definitive" status. Adam Kubert is about a half-step behind McFarlane for inclusion on my top five list, so I guess he rounds out my "didn't have a really long run on the character but was really memorable anyway" list.

Petter, I forgot about Rude. He did a nice Hulk, influenced by Kirby's version in his more brutal incarnation.

The reason I tend to shy away from "Top" list topics is because they are both subjective and devisive, somehow taking away from those not mentioned. While I love those listed, Paul Pelletier would also easily rank among the very best portrayers of the Hulk, in my mind.
